MIDDLE GEORGIA HOMEGROWN – Yes, it's hot, but July is ideal for second planting | News

JFourth of July celebrations, boating days on the lake, beach vacations, the All American Summer! Except for those of us who are diehard gardeners. July is always the busiest month. As I work in the kitchen and write between chores, my stove has both a canning batch of corn I harvested this morning and a big pot of salsa with tomatoes and peppers harvested earlier this week that will be canned right after the corn. While I waited, I made some refrigerator pickles from my unused cucumbers (I don't bother canning them because they don't last long enough!). Farmer George loves his hot dog relish that I made last weekend with the first big pickle harvest. Once the salsa is in the jar, I'll chop up more tomatoes to make a sauce and work on making an eggplant parmesan with the eggplants I also harvested this morning. Nothing reminds me of my mother more than eggplant parmesan. When I was a kid, we had spaghetti and meatballs every Saturday night. Mom had her weekly hair appointment and came home to prepare her sauce for dinner. On special occasions, she would make eggplant. I still can't make it as good as her, but it's a strong second place.

My purple hull peas are ripening in abundance, I pick and save them until I can get a batch to can or make for dinner. I can only do all this because Farmer George is napping in the lawn chair with the dogs and not bombarding me with questions or constantly getting in my way in the kitchen!
